Fermentation vessels must be made of food grade materials. The most
important characteristics of a plastic fermenter is that it has a very
smooth interior. Any scratches will provide a hiding place for bacteria
which will ruin your beer or wine. Plastic pails provide the necessary
head space to accommodate foaming and capacity to hold large volumes of
beer wort of fresh fruit. A 7.8 gallon bucket can accommodate 6
gallons of beer or wine during a primary. Another reason buckets make a
good primary fermentation vessel, is that the primary fermentation
creates the most residue on the vessel, and they are easier to clean
than carboys because you can remove the lid. Most homebrewers use
plastic pails for primary fermentation and use glass for secondary
fermentation.
